Need meals ideas for nights when you don’t have a ton of time? These dinners take 15-20 minutes to prepare and cook. All use kitchen staples so you don’t have to make a special trip to the grocery store. Serving size is 2 unless otherwise noted.
Scrambled Eggs
Ingredients:

4-6 large eggs

1 bag frozen diced peppers and onions

2 large handfuls baby spinach

Salt & pepper to taste
Directions:

Preheat a skillet over medium heat with 1 tbsp olive or coconut oil. Once the oil warm, add in the bag of frozen diced peppers and onions. Cook for several minutes until they begin to thaw. Add a dash of salt and pepper.

While the peppers and onions are cooking, whisk eggs in a bowl with a dash of salt.

Add your eggs to the skillet and cook for approximately 1 minute.

Add spinach. Stir frequently, cooking until eggs are no longer shiny and spinach is wilted. Season to taste.
Easy Salad
Ingredients:

1/4 cup + 2 tablespoons olive oil

1 lemon
-
3 cups greens (arugula, spinach, spring mix or romaine all work well)

8-oz canned salmon
-
salt and pepper to taste
Directions:

Squeeze juice from lemon into a large bowl.

Add olive oil and a dash each of salt and pepper. Whisk to combine.

Add greens and salmon. Toss and serve.
